Three vegetables, three textures, and a burst of colors to transform a simple plate of Gnocchi into a flavorful dish. Swiss chard, carrots, and catalogna are the stars of this rustic sauce, where the sweetness of the carrots meets the bold flavor of the catalogna.

Ingredients for 2 people
- 500 g of Lo Gnocco potato Gnocchi
- 150 g of Swiss chard
- 100 g of catalogna
- 2 carrots
- 2 tablespoons of extra virgin olive oil
- 1 clove of garlic
- 30 g of grated pecorino cheese
- salt and pepper to taste
- chili pepper to taste
Preparation
Wash the vegetables thoroughly and cut the carrots into thin rounds, the Swiss chard into strips, finally the catalogna into pieces that aren’t too large.
In a skillet, heat the oil with the garlic and a pinch of red pepper flakes, then add the carrots first and let them cook for a few minutes. Then add the Swiss chard and catalogna, season with salt, and let the flavors meld over medium heat. If necessary, add a little water and cover until the vegetables are tender but still firm.
Meanwhile, bring the salted water to a boil and cook the Lo Gnocco potato Gnocchi. It takes about a minute: when they float to the surface, drain them and transfer them to the pan with the vegetables.
Sauté everything together for a few minutes, adding a splash of the cooking liquid to help the sauce come together, then finish with a generous sprinkling of pecorino and a grind of pepper.
